Buffalo Chicken and Veggie Chili

Like I said, I love anything buffalo. I also LOVE chili, I don't care if its 90 degrees out, it is one of my favorite meals!
 Beans are a great source of protein and are cheap addition to your diet with many health benefits. They are high in fiber and antioxidants, a great substitute to eating meat a few nights a week or to "beef" up a meal and stretch it farther, and can help you cut calories without feeling deprived as they are packed with protein, and like I said have a higher fiber and water content than your typical protein options. 
You could also skip the chicken, and add an extra can of beans if you want a vegetarian option.

Here is what you will need:
-2-3 boneless skinless chicken breasts(I pre cook/bake mine)
-one white or yellow onion, diced  
-extra virgin olive oil
-1 cup green peppers, chopped
-2 cups zucchini, chopped
-3 stalks celery, diced
-1 cup of white mushrooms
-Approx. 6 cups of beans( I used one can kidney beans, 1 can garbanzo beans)
-1 can of diced tomatoes or stewed tomatoes
-3 fresh garlic cloves, minced
-1 tsp chili powder
-1/2 packet chili seasoning(I used Trader Joes)
-1 to 2 tsp dried basil
-Buffalo sauce(I use Franks)
-shredded cheese(optional)

How to make it:
I baked my chicken at 350 degrees for 40 minutes to it was ready to chop into bite size peices and throw into the chili. This makes it super fast to throw together!

Get a large pot. Add 3 tsp of extra virgin olive oil and turn on medium-low heat. Add chopped onions and celery, sautee until onions start to become clear. Be careful not to have your heat too hot or they will burn.
Add chopped chicken, zucchini and mushrooms, keep stirring for 2 minutes.
Add your beans, stewed tomatoes, garlic cloves, 1 tsp of chili powder, dried basil, and chili seasoning. 
Heat on low for 15-20 minutes and stir frequently. 

Before serving, stir in 1-2 Tbsp of buffalo sauce. You could add this to the whole pot, but I add it separately as my son won't eat spicy. This way everyone can flavor their own :)

Top with a little cheese if desire, or even a dollop of greek yogurt or sour cream.
