Healthy Squash Casserole
It is a healthy casserole...surprise! 
Recipe for casserole: Cut a medium spaghetti squash in half and scoop out seeds. Place in baking dish cut sides up, with 1/4 inch of water in pan. Bake at 375 for 30 minutes.

What you'll need:
-1 spaghetti squash
-half a purple onion
-1 tomato
-olive oil
-3-5 garlic cloves
-1 cup cottage cheese
-shredded cheese
-1 tsp dried basil
-1/4 tsp dried mint
-sea salt & pepper

 While squash is baking.. Sautée half a chopped onion (I used a purple onion) in 1 tsp of olive oil on medium heat for about 1 minute. Add one tomato, chopped, keep stirring for about 1 more minute. Add 3-5 garlic cloves minced, 1 tsp of dried basil(or 4 leaves fresh, chopped), 1/4 tsp of dried mint, pinch of sea salt & pinch of pepper. Stir together and remove from heat. 

When squash is cooked, hold halves over mixing bowl and scoop out insides. Add onion and tomato mixture to bowl. Add 1 cup of low fat cottage cheese & mix well. Scoop mixture back into squash shells, sprinkle with a little Parmesan or cheddar cheese and pop back in oven until cheese melts, about 10-15 minutes.
