Perfect Pumpkin French Toast 

With fall coming quickly, I have been on a pumpkin kick!! And since typical pumpkin/fall recipes are usually comfort food, involving lots of butter and sugar, I have been on a mission to create healthy pumpkin recipes! :) 

Here is my favorite so far & it is super simple. 

What you will need:
-2 slices of Ezekiel bread
-2 eggs
-1 1/2 Tbsp 100% all natural pure pumpkin(I used canned)
-1 Tbsp milk (I used coconut)
-1/2 tsp pumpkin pie spice
-3 drops of vanilla extract
-1 tsp coconut oil
-walnuts(or pecans)
-agave nectar or honey
-sprinkle of cinnamon 
(If you want to make a large batch just double or triple the recipe)

Mix the eggs, pumpkin, pumpkin pie spice, milk and vanilla in a bowl. Whip with a fork until well blended. 
Put a frying pan on medium heat and add your coconut oil. Soak the bread, one piece at a time in the pumpkin/egg mixture, flipping as to soak both side. Add to pan, and cook about 1 minute on each side or until egg mixture is cooked and it starts to brown a bit. Remove and place on a clean plate. Drizzle with a little agave nectar or honey, add walnuts(or pecans). You could also add some apple slices or peaches. And sprinkle on a little cinnamon.
If you usually use butter, you can use a little more coconut oil to get that added flavor.
