Roasted Veggies!
If you aren't a huge vegetable fan, let me tell you...you are missing out! Vegetables are one of the simplest and yummiest ways to get your much needed nutrition into your diet.
I love them many ways, but this is by far the easiest, and my favorite way to make almost any vegetable.
And its so SIMPLE.
Heat oven to 400 degrees.
Chop any veggies you like. I used green beans, cherry tomatoes, brussel sprouts and mushrooms. Place on a baking pan. Add a drizzle (depends how much depending on how many you are cooking for, I'd say 1 tsp per 2 cups of veggies), add minced garlic, and herbs if you like. I used dill. Toss with your hands. Spread evenly on the baking sheet and pop into the oven. Bake for 5-10 mins and move them around with a large spoon or spatula. Continue baking for another 5-8 minutes, less if you like them crunchy. And VOILA! Healthy, simple dish dish. Enjoy :)
