The Healthy Mama's Go To Oatmeal
Im always on the hunt to figure out new super yummy, fast and healthy breakfasts to make.
I always look for ways to add more protein and nutrients into my food choices, and just as importantly, my sons.
I started eating Steel Cut Oats when I started breastfeeding my son(they are great for milk supply, mamas!) and quickly fell in love with them. BUT, I wouldn't stay full very long after eating them. So I tried a million different toppings like walnuts, chia, apples, etc. and nothing seemed to help them give me that STICK to your gut feeling, that I thought of when I thought of a hearty bowl of oatmeal.
SO, I got creative. I now, I make my Steel Cut Oats with a little extra bang(I buy Bob's Red Mill quick cooking). I make my oatmeal according to the directions on the package, just before they have absorbed almost all of the water, I add egg whites!
What you will need:
- Steel cut oats
-eggs (whites separated), I use two whites per serving of oatmeal
How to make it:
I whip 2-4 egg whites(depending how much Im making, 2 per serving of oatmeal) in a bowl with a fork until they start to get white and frothy. Then, I turn the oatmeal to a low heat, and SLOWLY pour in the egg whites, a little bit at a time, while whipping into the oatmeal with my fork. If you do this too fast or don't whip as you add them, you will get big egg white clumps, YUCK.
Once Ive added all the egg whites, I continue to stir for another 1-2 minutes.
Then, I place it in bowls(one for me, one for my little guy) and add desired toppings.
This time I added peaches and apples to his, and apples, dried apricots, unsweetened coconut flakes and a little Trader Joe's almond butter to mine!
You could add any fruit, peanut butter, a little dark chocolate chips, chia, cinnamon, nutmeg....you get the point...add whatever YOU like and get creative! ENJOY.
