Turkey Bacon Leeks & Turnips
I always see leeks at the store and in recipes but had never really tried them before! I love trying new things so I bought some, and came up with this recipe. Makes a yummy side dish for any meal, and throwng it together takes less than 10 minutes! I served it with roasted pork.
Here's what you'll need:
-1 stalk of leeks, washed and chopped into 1/2 inch slices
-2 turnips, chopped
-1/2 cup matchstick carrots
-4 slices turkey bacon
- extra virgin olive oil
-salt, pepper, garlic powder
How to make it:
Preheat oven to 375 degrees.
Once you have chopped your leeks and turnip, put in a large baking dish. Add carrots.
Cook your turkey bacon in a sautee pan, until almost crispy. Remove from heat and chop bacon into small pieces and add to baking dish. Add 2 tsp of olive oil, a dash of salt, pepper and 1 tsp of garlic powder. Toss well. Bake for about 30 mins or until veggies start to brown a bit, stirring at least twice while baking to ensure it all cooks evenly.
Remove from oven and enjoy! For a little extra flavor add a Tbsp of balsamic vinegar and toss before serving! Enjoy! XO
