Buffalo Turkey Stuffed Peppers

I needed another way to use my leftover Thanksgiving turkey and with all the avid football fans out there-- why not combine the two for a yummy & a little spicy appetizer!

And only 6 ingredients....who doesn't love simple & quick!? 

What you'll need:
-About 6 large mini peppers, washed and halved
-1 cup turkey, chopped or shredded small(you could also use chicken)
-1/4 cup Frank's Buffalo sauce
-1 minced garlic clove
-shredded cheese (I used alehouse cheddar...for a touch of beer flavor- buffalo & beer, yes please!)
-1/8 cup fresh parsley, chopped fine

How to make it:
Lay your halved peppers in a baking dish. Preheat the oven to 400 degrees. 
Combine turkey, buffalo sauce, garlic and parsley in a bowl. Mix well. Spoon mixture into peppers and press in firmly, so they don't fall apart when you cook them. 
Sprinkle with shredded cheese. 
Bake for 15 minutes. 
Serve hot. You could add a little blue cheese or ranch for dipping!
