"Unstuffed" Stuffed Cabbage 

I love healthy comfort food! My Nana used to make amazing stuffed cabbage rolls and I loved them, but they are a LOT of work. Who has time for that?! So, I came up with this simplified version, and made it unstuffed...so its the same flavors, without all the work of wrapping the mixture into cabbage rolls! 

What you will need:
-1 medium head of green cabbage (you could use purple if you prefer), chopped into 1/4 inch slices, to make about 5 cups
-1 lb lean ground beef or turkey
-extra virgin olive oil or coconut oil
-1 medium white onion, chopped (about 1 cup)
-1 16 oz can of italian diced tomatoes
-1 8 oz can of tomato sauce, no salt added
-5-7 cloves of fresh minced garlic
-1 Tbsp italian seasoning
-1 tsp dried dill(optional)
-1 tsp garlic powder
-1 tsp of dried basil
-sea salt & pinch of black pepper, to taste

How to make it:
Add 2 tsps of olive oil or coconut oil to a large pot and turn on medium heat. Add your diced onion. Add your meat. Cook until meat is browned. 
Add the italian diced tomatoes, tomato sauce, and spices and 3/4 cup of water. Bring to a boil.  Add sliced cabbage. Turn heat down to medium-low. Simmer, stirring often, for about 20 minutes or until water has cooked out and cabbage is tender. Do a taste test and add a little more sea salt or pepper if needed. 

Serve hot on top of brown rice or quinoa. Soo good. And kids love it too!
I like to add a little hot sauce, lemon juice or cheese to top mine off! ENJOY!
