Quick & easy mini omelettes on the go!

I am always looking for super simple breakfasts that are not only healthy, but fast and easy to make! 
And...my son absolutely LOVES these!

And eggs have so many health benefits! Eggs are very rich in the antioxidants Lutein and Zeaxanthine, which can help protect the eyes against eye diseases such as Macular Degeneration and Cataracts. They also are a great source of high quality protein, good fat and are rich in iron, choline, phosphorous, selenium and vitamins A, B12, B2, and B5 and minerals! They also help keep you full and make you feel satisfied. 


I found this idea on pinterest, so I can't really take credit for the idea. The original recipe called for egg whites, but I used white and yolks, and of course I like to add my own flair and spice things up a bit! (I'll post the original recipe at the bottom.)

What you'll need:
-a muffin tin
-non stick spray (I used PAM)
-8 eggs
-shredded cheddar cheese
-2 cups of veggies of your choice (I used yellow and orange
and chopped cherry tomatoes but you could use spinach, 
onion, mushrooms, etc)
-dried basil
-garlic powder
-sea salt
-black pepper
(I also like mine with a dash of tobasco on top for some spice!)

How to make them:
Crack your eggs, into a bowl, making sure you avoid shells ;)
Beat well with a fork until all one consistency. 
Add 1 1/2 tsp garlic power, 1 1/2 tsp of dried basil, a pinch of sea salt & pepper
Set aside.

Spray your muffin tin with PAM.

Chop all your veggies and distribute evenly into bottom of muffin tin cups, 12 total. 
Pour egg mixture over veggies into each, about 2/3 full. Sprinkle with shredded cheese.

Bake at 350 for 20-25 until puffy and fully cooked. Let rest for about 2 minutes before serving.

21 Day Fix: Makes 4 servings- 3 muffins count as 1 red, 1/2 green, 1/2 blue.
