Apple & Rosemary Pork Loin 
with sweet potatoes 

Who doesn't love making crock pot meals! They're awesome because you can simply throw everything in, set it, and forget about it! 

Like all my recipes, this is super simple, and the pork comes out really tender! 

What you'll need:
-1 to 1/2 lb lean pork loin (plain)
-1 apple, cut into thin slices, and then into halves (I used gala)
-1/2 white onion, sliced thin
- 2 tsps extra virgin olive oil
-100% apple juice (1/4- 1/2 cup depending on how big your pork loin is), I used Simply Apple
- 1 Tbsp dried rosemary
-1 Tbsp garlic powder
-1 large sweet potato (per person, I used 1 extra large for 2 people)


How to make it:
Into the bottom of your crock pot, add your extra virgin olive oil and then your sliced onion. 

Take your pork loin and place on a cutting board. Make slices, 3/4 of the way through, being careful not to cut through to the bottom, about 1/4 an inch apart, all the way down the loin, leaving about a 1/2 inch on each end. Place into the crock pot on top of the onions. Place one apple slice into each incision that you made in the pork loin. 

Pour your apple juice over the loin into the crock pot. Sprinkle pork loin with 1 Tbsp of dried rosemary, and 1 Tbsp of garlic powder. 

Turn your crock pot on high for 4 hours, or on low for 6. 
If you want to add your sweet potatoes at the same time, I suggest stabbing them with a fork, and placing them in whole, otherwise they will turn into mush by the time the pork is done. 

I added my sweet potatoes an hour before it was done, and cut them into quarters, and placed them face down...so the end result, looked like this. 

I then plated the pork and served my sweet potato with a little coconut oil drizzle & cinnamon.
