Banana Coconut Oatmeal Cookies
(& a little peanut butter too!)
Oatmeal cookies...yum. Coconut anything, sign me up. Bananas...a food staple in my eyes.
Peanut butter, who doesn't love it?! Combine it all in a HEALTHY cookie...YES PLEASE!
I have to mention, these are flour-less and eggless! I was so pleasantly surprised how they turned out when I got down the right consistency...so here it is! I hope you love them as much as we do when you need a sweet fix without the guilt! ;)
What you'll need:
-2 ripe bananas, peeled and mashed well
-1 cup of old fashioned oats
-4 to 5 Tbsp of Peanut Butter, I use (all natural) creamy
-4 Tbsp of ground flax seed
-1/4 cup of craisins (or raisins if you prefer)
-1/3 cup shredded coconut, I used unsweet
-1 tsp of vanilla
-honey
and that is IT!
How to make them:
Preheat your oven to 350.
Throw your two ripe, peeled bananas in a large mixing bowl and mash well...I use a fork or a whisk. Add your oats, peanut butter, flax seed, craisins, coconut and vanilla. Mix well with a spatula or whisk, until completely combined.
Spoon large spoonfuls onto a greased baking sheet. If you like sweet, drizzle a tiny bit of honey on each before cooking. Makes 12 cookies. Bake for about 15 minutes, checking to see as the edges brown. If you like chewy, take them out then. If you like them a little crispier you can leave in for a few more minutes but make sure to check they don't burn!
I LOVE how they taste right out of the oven, but they are good if you want to cool them and eat later or share too! Enjoy!
