Coffee- Nut Energy Bites 

I don't know about you but I LOVE coffee. Hot coffee. Iced coffee. The smell of coffee. The feel of freshly ground beans. Regular, decaf or espresso, lattes, macchiatos...I think you get the point... I do not discriminate with my coffee love affair! That is except for coffee ice cream, I am NOT a fan! HA!  ( I don't need it now for the energy boost, thanks to my nutrient dense Shakeology, so I drink it now just because I enjoy it. I guess you could say I am cheating! OOPS!) 

Funny story...I feel in love with coffee when I was 12. I would sip on my mothers hazelnut decaf, that was more cream that it was coffee, typically. I was always really tall and my mom jokingly told me it would stunt my growth. Apparently that didn't work, I am 5'8! Anyways...

I absolutely love little homemade energy bites as a snack (there are other recipes for them on my blog if you aren't a coffee fan). They are easy to make, easy to store, you can even freeze them and take a few out at a time and they make for quick, easy snacks that also travel well! 

And since we all need a little healthy boost in one bite sometimes (did you know coffee in small amounts has great health benefits!?!), I created these nutty like coffee bites! So...let's get down to business how to make these savory little treats! 

You will need a food processor to make these. ;) 

What you'll need: 
- 1 1/2 cup old fashioned rolled oats 
- 1/4 cup of finely ground coffee (you can use regular or decaf)
- 1/3 to 1/4 cup almond butter 
- 4 tsp of honey 
- 2 Tbsp of coconut oil 
- 1/4 cup raw almonds 
- 12 chocolate covered espresso beans 

How to make it: 
Throw your oats and ground coffee into food processor (see below). Process for about 30- 45 seconds or until coffee is ground fine and oats are a similar consistency. 


Add your coconut oil, almonds, honey, and almond butter. Blend for about 1 minute until everything is combined well. You may need to turn it off and scrape ingredients down so they combine and mix evenly. Then process again until it looks like the picture below. Now, you are ready to roll it into balls! 


Grab a small handful of the mixture and pack tightly between your hands, then roll into a ball. Repeat until the mixture is gone. This recipe makes 12, 1 inch size bites. You can make them smaller if you like. I don't suggest any larger as the coffee flavor is very rich! ;) 


Once you have rolled them into balls. Top each ball with a chocolate covered espresso bean & enjoy!
