Creamy Pistachio Pudding Bark
I love spending time in the kitchen with my little man, coming up with new healthy recipes for summer!
This morning we made this yummy creamy pistachio bark! And we both loved it!
I used to be a sucker for my grandmas pistachio cake- this is a much healthier way for me to get my pistachio fix! The key to a healthy lifestyle for me has been finding healthier versions of what I love, with the same flavors!! ;)
Here's the recipe if you want to try it!
What you'll need:
-1 cup low or non-fat plain Greek yogurt
- 2 1/2 Tbsp regular or sugar free pistachio pudding mix (I used SF)
-1/2 tsp vanilla extract
-1 to 2 tsp honey
-1/2 cup of chopped pistachios
How to make it:
Whisk together your yogurt, pistachio pudding mix, vanilla and honey in a bowl. Mix well until there is no lumps of pudding mix. Spread mixture evenly on top of parchment paper, on a cookie sheet (like above).
Top with pistachios. Put your tray in the freezer for at least 40 minutes, then pull it out and break into pieces- to create "bark". Enjoy!
