Clean Crockpot Carnitas Meat
I LOVE Mexican inspired food and flavors! I used to order this a lot when I would go out to eat but once I adapted a "clean" eating lifestyle, I was determined to find a way to make it at home so I actually knew WHAT was in it. It is really ALL about the seasonings and spices!!
This is such a flavorful addition to any meal.
You can put it on top of nachos (like pictured above), add it to a salad, use it to make quesadillas, use it in tacos...endless Carnitas possibilities!
What you'll need:
-1.25 lbs of meat (You can use chicken, pork or beef- I used mock tender roast for this recipe)
-1 medium yellow onion, sliced
-1 large green bell pepper, sliced
-1 tsp olive oil
-SPICES for the rub:
-1 Tbsp chili powder
-1 tsp cumin
-1 tsp onion powder
-5 fresh minced garlic cloves
-dash of cayenne pepper
-1 tsp sea salt
-1 tsp black pepper
How to make it:
Place your sliced onion and bell pepper in the bottom of your crock pot. Place your meat on top. Brush the meat with 1 tsp of olive oil (this will allow the rub to stick!).
In a bowl, combine ALL of your spices. Mix well. Pat rub mixture on top of meat. (See bottom pictures.)
And that's it! Set your crock pot on low for 6-8 hours. When it is done, shred well with a fork, leaving the juices in it.
ENJOY it however you like! And the leftover meat tastes just as incredible, so sometimes I like to make a double batch!!
