Banana Creme Quinoa Parfait
This recipe really hits my sweet spot for the perfect afternoon snack. I am always trying to find yummy snacks that satisfy my taste for creativity and flavor, while fitting in my healthy lifestyle! It would also make a great on the go breakfast that you could prepare ahead of time! ;)
This recipe was inspired by a recipe I found in my nutrition plan, when I was doing Hammer and Chisel, and I just adjusted it a bit to my liking!
What you'll need:
-1/2 cup of plain, cooked quinoa
-3/4 cup of plain nonfat greek yogurt
-1/2 large banana sliced
-cinnamon
-honey to drizzle
-a few dark chocolate chips or walnuts (optional)
How to make it:
Find a glass to make it in! I suggest a taller, slimmer glass if you want the look that you see here.
In the bottom, spoon in half of your cooked quinoa, then spoon in a layer half of your yogurt on top. Add half your banana slices on top of the yogurt. Repeat. After you have placed your banana slices as the top layer, add a dash of cinnamon and a little honey drizzle (about 1/2 tsp). Add dark chocolate chips or walnuts if you like!
That's it! Enjoy!
You can also plan with ingredients and use berries, pineapple, pears or peaches, instead of banana and add whatever nuts you like for toppings!! Pear and walnut would be a yummy combo! Get creative and have fun with your food!
