Feta and olives were a staple in my home growing up, so anything I can make that includes them, is a WIN in my opinion! 

I have also totally fallen in love with quinoa since I have adapted a clean eating lifestyle. Quinoa salads are one of my favorite go to meals when I need fast, healthy, and flavorful that satisfies and keeps me full!  
So, I figured-- why not combine them for one flavor packed meal! 

Greek Quinoa Salad 

Here is what you will need:
5 cups cooked quinoa 

1 cup chopped red bell pepper 

1 cup chopped orange bell pepper  (or green works too!)

1 cup cut cucumber slices 
1 cup cut green beans 
1 cup halved cherry tomatoes 
1/2 cup chopped red onion
1 cup crumbled feta cheese
1 cup kalamata olives (you can cut them in half if you like!)


How to make it: 
Place all ingredients in a bowl. I like to put the quinoa in the bottom, the place the vegetables around the outside of the bowl for a eye catching look. 

I make a simple lemon vinaigrette to use with it! It really brings all the flavors together beautifully! 

Lemon Vinaigrette
-4 Tbsp extra virgin olive oil
-6 Tbsp balsamic vinegar
-fresh lemon juice (from 1/2-1 whole lemon depending how "lemony" you like it, make sure you don't get any seeds in there! ;) )
1 Tbsp garlic powder
1 Tbsp dried basil
pinch of sea salt
pinch of black pepper
Mix the dressing well then pour on top of your Greek Quinoa salad! 

Toss well! Chill for 20 minutes. Then, dig in, serve and enjoy! 

(You can also add grilled chicken, shrimp or steak to this to make it a complete, protein packed meal! )
