Bun-less Turkey Burger Sliders 

Have you ever ditched the bun, when you make burgers?! You really never know what you will love or what you are missing out on, unless you try it, right?! I personally LOVE using sweet potatoes or yams, as a substitute for my buns. And my son absolutely loves them too! #MomWin

Sometimes you just want a good MEATY burger, with some killer toppings, and these deliver (without the typical greasy post burger bloat)!

They're super simple to make. They're great for a quick week night meal. They're also also to bring to a party or have at a BBQ! I hope you enjoy them as much as we do!

Here is how to make them! Super simple!

What you'll need:
-1 lb ground turkey (you could also use lean ground beef or chicken)
-2 Tbsp southwest seasoning (will put the recipe below)
-1 tsp Worcestershire sauce 
-1 medium/large sweet potato, peeled and cut into 1/4 inch slices
-2 1/2 tsp coconut oil
-sea salt and black pepper
-1 to 1/2 tsp of dried basil 

-fresh spinach
-1 red bell pepper, sliced 
-1 cup sliced mushrooms
-spicy pickles and hot peppers to put on top (optional)

You can really add whatever toppings you like-- get creative! Cheese, sundries tomatoes, goat cheese, avocado are all some of my favorite burger toppings!

Southwest Seasoning: (from the 21 Day Fix meal plan)
1 Tbsp chili powder
2 tsp ground cumin
1 tsp coriander 
1/2 tsp onion powder 
1/2 tsp garlic powder
1/2 tsp dried oregano 
1/2 tsp smoked paprika 
1 tsp sea salt 
Put all in a bowl and stir well!

How to make them:
Preheat oven to 375. Line a baking pan with foil, or use a non stick pan.
Peel and slice your sweet potato. Place slices in a bowl and toss with 1 tsp coconut oil and a little bit of sea salt, pepper and basil. Place potato slices on your baking sheet, spread out evenly so they do not overlap. 
 I then, add my sliced red pepper and mushroom, to another baking pan, toss in 1/2 tsp of coconut oil, sea salt and cook at the SAME time. 

Bake for 25-30 minutes, until the sweet potatoes start to get crispy and a little bit browned and my red peppers and mushrooms have roasted (be careful not to burn them). Make sure to flip sweet potatoes or move veggies around, once during cooking, half way through. 

While your sweet potatoes and roasted veggies are cooking, you will make your burgers!
Since I like burgers to be MEAT and no fluff, that is all it is! Put your turkey meat in a bowl and add the 2 Tbsp of southwest seasoning and Worcestershire sauce. Mix well (I do so with my hands). Form into equal size patties. One pound of meat should make 10-12 small patties. (It is a good idea to use the size of your sweet potato slices as a judge to how big they should be.)

Heat a saute pan to medium heat. Add 1 tsp of coconut oil. Add burgers. Cook about 5 minutes, with a cover. Remove cover, flip, cook another 5 minutes, or until they are cooked all the way through and there is no pink in the middle (unless you are using beef and desire it that way!)

You could also grill them! 

Now, your sweet potatoes should be done and its time to  put those bad boys together! 

Place sweet potato slices on a plate. Add a handful of spinach to each. Top each with a burger. Add 2 mushroom slices and 3 red pepper slices to each burger.  Add cheese if desired. Top with another slice of sweet potato. 
Add your desired toppings. 

Dig in and enjoy!
