Declan's Healthy Broccoli Bites


 Anyone else's kiddo a tater tot or hash brown fan like mine?! 

I created these so he can enjoy them, with a healthy flair! Added bonus: they are veggie packed! Mom win! (and mommy approved to enjoy, too!)

They are SO simple to make an absolutely delicious! 

What you will need for ingredients:
2 cups Broccoli
1/4 cup yellow onion, diced
1 egg
2/3 cup bread crumbs (I toast two pieces of seeded whole wheat bread, and make my own in the food processor!)
2 Tbsp whole wheat flour
1/2 cup Cheddar cheese (+ a little extra to sprinkle on top of them before baking)
2 tbsp Parsley
1/2 tsp Pepper
1/2 tsp Salt

How to make them:
Preheat the oven to 400°F. Grease a baking sheet with a thin layer of oil (I use coconut oil spray) or line with parchment paper and set aside.

Steam the broccoli in boiling water for 1 minute. Drain well (you don't want it too well or the bites won't get crisp!).

Chop broccoli finely (I throw it in the food processor and push for about 30 seconds) and mix it with the egg, onions, cheddar, your choice of breadcrumbs, salt, pepper, parsley. Mix WELL. Scoop about 1 Tablespoons of broccoli mixture using a measuring spoon or your hands. Roll into a ball. Place the broccoli ball on baking sheet and gently press down. Repeat until all mix is used. Top with a little more shredded cheese.

Bake until golden brown and crispy, 20 minutes.

Remove from the oven and enjoy hot on their own or with your favorite dipping sauce-- ketchup, sriracha, ranch dressing, or a greek yogurt dip!
