Buffalo Cauliflower:
I love creating fun new side dishes, that are healthy and pack in a punch of flavor! Im ALL about flavor when it comes to food, the more the better in my book. Healthy eating does NOT have to be boring!!
So, I created this recipe when I was craving buffalo wings one night. Buffalo wings obviously aren't a very healthy choice...but I love buffalo anything! I had a head of cauliflower and just threw some things together to test out a new creation. And WHAM, it is delish! 

Here is what you will need:
-1 head of cauliflower
-Extra virgin olive oil
-garlic powder
-cayenne powder
-paprika
-sea salt
-Buffalo Sauce(I use Frank's)
-Blue cheese crumbles or dressing(optional)

Heres how to make it:
Preheat your oven to 425 degrees.
Wash a head of cauliflower thoroughly. Chop off the bottom, leaves, stem, etc. Chop into bite sizes pieces. 
Pat dry or set on top of paper towels for a few minutes until most of water has dripped off.
Then place the chopped pieces of cauliflower in a medium mixing bowl. 
Add to bowl:
-1 1/2 tsp of extra virgin olive oil
-1 tsp garlic powder
-1/2 tsp cayenne powder(if you don't love spicy, skip this)
-1/2 tsp paprika
-1/8 tsp sea salt(can choose to skip if you have a low sodium diet)
Toss well until all pieces are coated with seasonings.
Spread cauliflower out onto a baking sheet.
Place in the oven and bake for 15-20 minutes or until cauliflower starts to get a little bit brown(be careful not to burn!)
Remove from oven and place cauliflower back into a bowl. 
Toss with 2 Tbsp. of Buffalo Sauce.
Then, if you'd like, top with Blue Cheese crumbles and serve hot! 

You can also may your own creamy blue cheese dip with 1/4 cup of Blue cheese crumbles and 1/4 cup of greek yogurt! Simple! :)
