Delicious Broccoli Summer Salad
I created this recipe when I was going to my moms for a barbecue. I had made broccoli salad for years, but since I committed to clean/healthy eating, I knew the recipe needed to change. The original recipe called for quite a bit of mayo and sugar. So I played with it a few times until it tasted the way I wanted it to.
If you have a recipe you love, but know it isn't healthy...get creative and use different ingredients! You can often come up with a much healthier version...or send it to me, I always love a challenge. Anyways....here is the healthier version of the recipe :)
What you'll need:
-1 head of broccoli, washed and chopped into bite size pieces
-half of a purple onion, chopped
-1/2 cup low sugar dried cranberries(or raisins if you prefer)
-1/3 cup chopped pecans(or sunflower seeds)
-1/4 to 1/2 cup crumbled feta ( depending on your liking)
Add all those ingredients to a large bowl.
For dressing:
In a bowl, add all these together...
-4 tsp red wine vinegar
-2 1/2 tsps of raw coconut sugar (or agave nectar)
-1/2 tsp sea salt
-1 Tbsp spicy mustard
-1/2 tsp Worcstershire sauce
-3 drops of Tobasco
Whisk well...then add
-2 Tbsp low fat plain Greek yogurt and add pepper to taste
Whisk again until it is all mixed well and there is no chunks.
Add dressing to the other bowl with the salad in it. Mix together well, tossing until evenly coated.
Top with a little more cranberries and feta! YUMM!

You can get creative if you don't like feta and add blue cheese, cheddar, etc.
Also, you like I said, you could also use raisins and sunflower seeds instead :) Make it your own if you like!
