Balsamic Sausage, Apple & Feta Pasta Salad
I LOVE pasta salad, and we all know it isn't usually a very healthy option. NOW it is!
And with a fancy balsamic flair!
This recipe is super simple, takes about 20 minutes and everyone will love it!
What you will need:
-1 box whole wheat pasta(any shape, I used penne)
-half an onion, white or purple, chopped
-1 large zuchinni(or yellow squash)
-2 stalks celery
-1 large apple(I used macintosh), cored & chopped into bite size pieces
-4 apple chicken sausages, chopped (I used Aidell's Chicken & Apple Smoked Sausage)
-balsamic vinegar
-olive oil(and/or coconut oil)
garlic powder
-dried rosemary(optional)
-feta cheese(or cheese or your choice)
How to make it!
Heat your water, add your whole wheat pasta and begin to cook according to package directions. While your pasta is cooking....
First, chop your onion and celery into small pieces. Add 1 Tbsp coconut oil(or olive oil) to a medium skillet and turn on medium heat. Add onions and celery to pan. Cook for a minute, then add in the chopped sausage. Sauté for about two minutes or until onions start to soften and get clear. Add chopped zucchini, 1 Tbsp balsamic vinegar, 1 tsp of garlic powder, and a dash of dried rosemary(if you like).
Sautee until zucchini starts to get soft. Remove from heat and set aside.
By now, your pasta should be done. Remove from heat and drain, put 4 cups of pasta in a bowl. Add 3 tsp of olive oil and 2-3 tsps of balsamic vinegar. Add your sausage and veggie mixture to the bowl. Add 1/4-1/2 cup feta (If you are 21 Day Fixing, I added 4 blue containers.) Add chopped apple. Toss well and serve!
