No- Bake Energy Bites
The possibilities are endless!
I love creating healthy & quick snacks that actually taste like a treat while keeping my energy up! Who doesn't need healthy snacks that travel easily, are fast to throw together, and you won't get bored crunching on the same thing, day in and day out?! So I did some experimenting with my food processor this morning and came up with these! (And my son actually loved them too, WIN!)
These are just two of the many ways you could make these, to customize them to your liking! I hope you enjoy them as much as we do!

Apricot, ginger & walnut bites:
What you will need:
-20 dried apricots
-3 pieces of dried ginger (if you don't like ginger, just skip this!)
-1/4 cup Organic old fashioned rolled oats (I used Bob's Red Mill brand)
-1/4 cup walnuts, raw and unsalted (you could also use almonds, cashews or pecans)
-1 Tbsp Coconut oil (I use organic, extra virgin, cold pressed--best flavor!)
-2 Tbsp unsweetened coconut flakes
-1 tsp agave nectar or honey
-3 drops of vanilla extract
How to make them:
Put all ingredients in a food processor and blend until it looks like consistency of bread crumbs. Use a spoon to take a small amount at a time, then pack and roll in your hands, until you have a formed balls. You can also roll in a little extra coconut flakes if you would like them to look a little fancier ;)
Almond, date & dark chocolate bites:
What you will need:
-1/2 cup of dried, unsweetened dates
-1/4 cup organic old fashioned rolled oats
- 1/4 cup almonds, raw, unsalted
-1 Tbsp dark chocolate semi- sweet chips ( I use 70% cocoa)
- 1 Tbsp of coconut oil
- 3 drops of vanilla extract
How to make them:
Again, put all ingredients in the food processor and blend well. Take one spoonful at a time and form into balls or "bites" as I call them. You could also roll these in coconut flakes as well. They would be cute for a healthier version of snow ball holiday cookies!
Create your OWN combo!:
Keep the base the same-
-1/2 cup of any type of dried fruit (you could use cranberries, strawberries, pineapple, etc)
-1/4 cup of raw, unsalted nuts
- 1/4 cup old fashioned rolled oats
- 1 Tbsp of coconut oil
Then you could add extracts, coconut, chocolate, almond or peanut butter, etc...just add in small increments and blend...until you get the desired consistency that you can form into balls! Have fun with it!
