Savory Turkey Pumpkin Chili 

OHHH my, this is so good. Hearty, healthy, savory & perfect for any chilly night. Or any night rather, I love the flavors of fall anytime of the year!

I found a recipe a while back for pumpkin chili, and go figure...I couldn't find it when I looked for it tonight (I'll blame it on the mommy brain!). So, I threw together this pot of yumminess with what I thought would taste amazing, and it did not disappoint! And it makes the house smell amazing while you are making it! Plus, it tastes even better as leftovers. WIN!

What you'll need:

- 2 tsps of extra virgin olive oil
- 1 lb of lean ground beef or turkey
- 1 medium white onion, chopped (mine made about 1 cup)
- 1 cup of chopped peppers (I used green & yellow)
- 3 stalks celery, chopped
- 1 14.5 oz can of fire roasted diced tomatoes
-1 14.5 oz can regular diced tomatoes 
- 1 15.5 oz can of kidney beans (I used dark, no salt added, rinse well)
- 1 15.5 oz can of white beans or chickpeas (no salt added, rinsed well)
- 1/2 cup chopped mushroom (optional) 
- 1 15 oz can of 100% pure pumpkin 
-2 tsp Chili powder
- 1 1/2 Tbsp garlic powder ( or 5 fresh minced garlic cloves)
- 1 1/2 tsp ground cumin
- 1 1/2 tsp onion powder
- 1 1/2 tsp sweet spanish paprika
- 1 bay dried bay leaf, whole, fresh or dried
- 1 tsp of cinnamon (optional)
- dash of himalayan sea salt, to taste
- dash of ground black pepper, to taste 


How to make it:

Get a large pot, add your 2 tsps of olive to the bottom.  Toss in your diced onion, peppers, celery, and ground meat. Turn onto medium heat. 

Add chili powder, paprika, onion powder, garlic powder, cumin, bay leaf and cinnamon. Cook for about 10 minutes, stirring often (and make sure to break up meat into small bites with your spoon as it cooks) until meat is browned and onions become translucent. Make sure all seasoning is distributed well. 

Add your fire roasted and regular diced tomatoes and beans. Mix well. 

Add your can of pumpkin. Add 1/2- 3/4  cup of water (depending on consistency you like). Mix well again. Turn heat to low and let simmer for 15 minutes.

If you really want to bring out the cinnamon and pumpkin flavor and add a touch of sweetness, you can add 1 tsp of brown sugar!

Add salt and pepper to taste. 

I served topped with a little shredded cheddar cheese, jalapeño slices & a dollop of plain greek yogurt (instead sour cream!).  YUM!
