Healthy Creamy, Crunchy & Tangy Chicken Salad 

Do you love a quick lunch? Do you love chicken salad? Well, if you are like me you do, but typical chicken salad isn't healthy! It usually packs in a lot of calories, fat, and sodium! NOT healthy! It is all about learning to make things different ways so you can still enjoy what you love, but it is actually GOOD for you, I promise you won't even notice there is no mayo in this!! So here is one of my go to lunch recipes! 

What you will need:
-1 12.5 can of all white meat chunk chicken breast (or 1 cup of pre cooked, chopped chicken breast- I often use rotisserie with the skin removed.)
-1/3 cup white or purple onion, diced fine
-3/4 a cup or about 2 stalks of celery, washed and chopped into thin slices
-1 medium apple, or 1 cup, diced into small cubes  (I used gala)
OR grapes (instead of apple!)
-2 Tbsp of non fat, plain greek yogurt
-1 Tbsp of spicy mustard 
-1 tsp of garlic powder
-1 Tbsp of red wine vinegar
-sea salt & black pepper to taste

How to make it:
If you are using chopped chicken, make sure to drain out the liquid well. Put your chicken in a large bowl. Add your diced onion, celery, and apple. Sometimes I like to add grapes too, so instead of 1 cup of apple, I will add half a cup of apple and 1/2 cup of grapes, chopped into halves. Chop your apple like this...

Then, add your yogurt, spicy mustard, garlic powder, vinegar, and a little salt and pepper. After I mix it, I taste it and add more if needed! It will look like this...

Then combine with a large fork, making sure to break up any large chunks of chicken, until everything is completely mixed. And sometimes I like to add some walnuts for an extra crunch! 

It will look like this. Super simple, right?!

Then you can throw it on a wrap with some mixed green or spinach, on a sandwich, or even on top of a salad! ENJOY!

(Side note, if you feel like you can taste the greek yogurt flavor, add a tsp of agave nectar, it will cut that bitterness and taste even more like you made it with mayo) ;)
