Southwest Steak & Quinoa Chili
I often make the most delicious meals when I have to throw something together quick! And that is exactly how this was created!
I love making "one pot wonder meals", especially when I am short on time to make dinner on a week night. This took less than 20 minutes and is super simple to make. It is very filling, and my son loved it too...win, win! (I made this recipe for 2, so if you are making it for more, you will want to double or triple the recipe.)
What you'll need:
-8 oz of lean beef (I used top sirloin), cut into bite size pieces
-2 cups of quinoa (I use red quinoa, and cooked according to directions before adding to the main dish pot)
-1/2 white onion, chopped
-1 cup chopped green pepper
-1/4 cup sliced black olives
-1 14.5 oz can of fire roasted tomatoes
-1 14.5 oz can of black beans, rinsed
-extra virgin olive oil
-2 Tbsp of Southwest Seasoning (I'll post recipe below)
How to make:
-First, cook your quinoa, a 2 cup serving, according to directions, then set aside. I used red quinoa from Trader Joe's.
-In a large skillet, add 2 tsps of olive oil on medium high heat. Throw in your chunks of sirloin, and brown for about one minute, moving them around with a wooden spoon or spatula. Add your onion, peppers and olives. It will look like this.
Add your Southwest seasoning. Then, let that sauté for about 5 minutes or until onion and peppers start to get a bit tender. Add in your can of fire roasted tomatoes and your can of black beans. Mix well and cook for another 3-5 minutes or until it starts to bubble. Add in your 2 cups of quinoa and toss together until it is all well mixed.
Now, you are ready to serve! I added a little shredded cheese & a dollop of greek yogurt in place of sour cream. Even add some hot sauce if you like! Enjoy!

I made it ahead of time and put it in an empty spice container so I can use as needed!

-2 tsp ground cumin
-1 tsp coriander
-1/2 tsp onion powder
-1/2 garlic powder
-1/2 tsp dried oregano
1/2 tsp smoked paprika
-1 tsp sea salt
