Healthy Peanut Butter French Toast 

Truth be told, I LOVE french toast. And I didn't make it for a long time after I started my health and fitness journey because I couldn't imagine enjoying it without it being slathered in butter and maple syrup...which we all know, it NOT so healthy. Haha. 

But, you can have your french toast and stay on track too! And if you or your kids are a peanut butter lovers, this is for you! Umm...why didn't I think of this combo before?!?! And it is super simple, of course! ;)


What you'll need:
-4 slices of whole wheat bread (I prefer Ezekiel sprouted grain bread)
-4 eggs
-4 Tbsp of powdered peanut butter (I use PB2 brand) or 2 Tbsp of all natural creamy peanut butter (softened in the microwave for about 10 seconds so it is easy to mix into eggs)
-1/2 tsp of vanilla extract 
-2 tsp of coconut oil 
-For toppings: fresh strawberries, honey, dark chocolate chips & grape jelly for my sons!


How to make it:
Put your 4 eggs in a large bowl, make sure you don't get any shells in there! ;)
 Add your powdered peanut butter and vanilla extract. 
Whisk WELL with a large fork or a whisk until mix well, like below.
 Make sure you scrape the sides of the bowl as you mix and that there is no powdered peanut butter clumps! It will be a smooth egg mixture (see below) when you have whisked it enough.


Get our a medium skillet or sautĂ© and put it on medium/high heat. 
Add your coconut oil to the pan.
 Now, dip your bread into the egg/peanut butter mixture, one slice at a time. Make sure to flip it and dip both sides. 
I usually let each side sit in the mixture for about 5 seconds to make sure it soaks the egg mixture up well. 
Then, throw one slice at a time into your heated sautĂ© pan. 
Cook for about a minute on each side, or until the egg is cooked and starts to brown a little bit to a pretty caramel color. Once all your french toast is cooked, you are ready for toppings! (Pictures below.)

I topped my sons with grape jelly, so it was like peanut butter and jelly french toast, he loved it! Yup, it is kid approved too!



And I topped mine with some fresh cut strawberries, dark chocolate chips & a drizzle of honey! Delicious. ENJOY!
