Cinco de Mayo Black Bean Dip

Happy Cinco de Mayo!! Every time this holiday comes around, I think of people saying, "Cinco de Drink-O!"! HAHA!! I mean, don't get me wrong... MMM...I love a good Margarita (...jalapeno margaritas anyone!?!?!)
...and I could totally just say "It's 5 O'Clock somewhere!! But, I decided to keep it clean and healthy this year ;) (A girl's got goals!)

Do you celebrate? If you do and you need a quick and easy appetizer, try this! It took less than 5 minutes to whip up and tastes fabulous! ;) 

You will need a food processor or blender with that option for this recipe. 

What you will need:
-1 15 oz can of black beans, rinsed and drained
- 3 tsp olive oil
- 1 Tbsp water
- 1 tsp garlic powder (or 1 fresh garlic clove is you like a stronger flavor)
- 1 handful of fresh cilantro, rinsed and patted dry
- juice from 1 lime
- pinch of sea salt 
- dash of hot sauce (optional!)
- chips for dinner (I served with whole grain tortilla chips)

Toppings (optional): 
- chopped cherry tomato
- shredded cheddar or mexican cheese
- pickled or fresh jalapeño 
- chopped peppers or extra cilantro
- black olives

How to make it:
Ready? This is SO EASY. 
Throw ALL the ingredients in a food processor and blend until smooth, it tools me about 45 seconds! Cinco de- DONE! :) 
Haha!! Told ya that was easy! 

Now, scrape the dip into a bowl and add your favorite toppings! I served this chilled. You could also heat it up first and then add your toppings! Serve with chips of your choice or even an array of chopped veggies! ENJOY!
