Homemade Zucchini Pasta Sauce 

Who doesn't love a good homemade pasta sauce!?! I can't say I have a secret family recipe, but I do love throwing some stuff into my food processor and seeing what I can come up with! I am a total DUMP cook...haha! And this one came out really yummy! 

Bonus, your sneaking in quite a few servings of veggies with the recipe! (I actually added the zucchini because I had a lot on hand and needed to use them up. Plus, it tones down the spice of the onion in it!) WIN, WIN! This recipe is great if you need to throw together a quick sauce that tastes like you spent hours slaving over the stove. I promise, I won't tell if you say you do ;)

It takes less than 10 minutes to throw together and it is great for picky eaters (come all, we all have one in the family)!

Here is how to make it! 

What you'll need:
- 2 large ripe tomatoes, rinsed and cut into quarters ( I like ugly or vine ripe tomatoes)
- half of a large white onion, peeled and chopped into 2 pieces
-2 fresh garlic cloves 
- 4 to 5 fresh basil leaves
-4 tsp of extra virgin olive oil 
- 1 large zucchini, rinsed and sliced 
-1 6oz can of tomato paste 
-1/2 tsp of sea salt
-dash of black pepper
(P.S. You will need a food processor or blender with that option to make this!)

How to make it:
Throw your tomato, onion, garlic, basil, tomato paste, salt, pepper and olive oil into the food processor (pictured below). Puree until smooth. For me it took about 45 seconds. You may have to take the lid off half way through and push ingredients down into the blades to make sure it all mixed evenly, then puree again. 



It will look like this once it has reached the right consistency! There shouldn't be any large chunks! 


Once that is done, pour it into a medium sauce pan on low to medium heat. If it is too hot it will bubble and splatter! (I warned ya!) Let this simmer for about 5 minutes as you prepare the zucchini so it really brings out the garlic and basil flavor! 

Now, take your chopped zucchini and throw it into the processor and blend until it has the same consistency as the sauce. It should look like the picture below!


Now, pour the zucchini puree into the sauce! Stir until the two purees are mixed well. 


Then it will look like this! Beautiful, bright, YUMMY, and bold flavored home made sauce! Wasn't that easy!?! Now, you can let it simmer on low, covered for about 10 minutes. And serve on whatever pasta dish you wish! ;)
