Clean Blueberry Apple Breakfast Casserole
I love making special breakfast when I have some extra time in the morning or on the weekend. I came up with this recipe, because I had some extra bread I needed to use before it went, and it came out so yummy! I made it with blueberries and apples, but I have also made it with strawberries, peaches and bananas...so use whatever fruit your family loves!
My son LOVES this recipe too. And to me, it almost tastes like yummy bread pudding! :)
Here is how I make it! (If you're making this for more than 3 people I suggest doubling the recipe!)
What you'll need:
-3 cups cubed, Ezekiel or whole grain bread
-4 eggs whites
-3/4 cup almond or cashew milk
-1/8 cup of honey
-1/2 tsp vanilla extract
-1/2 tsp almond extract
-1 tsp ground cinnamon
-dash of nutmeg
-1 cup of fruit
-optional- top with some slivered almonds!
smile emoticonHow to make itIn a mixing bowl combine your egg whites, honey, milk, extracts and cinnamon. Whisk until well mixed.
How to make it:
Pre heat your oven to 350.
But your cubed bread in a baking dish after spraying with non stick spray. Mine was an 8x6.
Pour liquid mixture over bread and fruit. Make sure all parts of bread are moistened so move bowl around as you pour it on. Sprinkle your fruit evenly over the bread. Toss once to make sure it is all mixed well. (If you use bananas or peaches I suggest mixing it first then putting fruit on top, so the fruit doesn't end up mushy!)
Bake for 40-45 minutes, until bread started to look a little toasted and there is no longer any liquid.
Serve warm. Enjoy.
