Healthy Crockpot Pumpkin Spice Latte 

I don't know about you but fall is my FAVORITE season! I truly miss the fall from when I lived up north, because we don't get much of it down here in the south. But that doesn't mean I can't bring the fall to me, right in my home! :) 

One of the biggest reasons I love this season, is fall foods and flavors...like pumpkin everything!! It just makes my heart happy.

One of my favorite fall treats is Pumpkin Spice Lattes...
BUT...when you buy them at coffee shops they can often be loaded with way too much sugar, chemicals, colorings and additives. Not so yummy. 

So, I created my own healthy version and home and it tastes WAY better than any lattes I used to get at a drive through! Try it for yourself and see ;) 

 I use my handy dandy crock pot and make this delicious, healthy version at home... there is even REAL pumpkin mixed right into it! Ready to make some for yourself and savor the flavor of fall in a own cup of pumpkin latte heaven?  (I get so excited about this as you can see the huge grin on my face below!)

What you'll need:
*Yes, you need a crock pot!
-4 cups of brewed black coffee (I like to make mine on the stronger side)
-4 1/2 cups of milk (regular, almond, cashew, soy-- whatever you prefer!)
-1/2 cup 100% PURE pumpkin, I use canned (you can find this is the baking aisle where the pie fillings are)
-1/2 cup honey (you can also use white or brown sugar)
-2 tsp vanilla extract 
-1 tsp pumpkin pie spice
-1 cinnamon stick (optional, but I like the spicy cinnamon kick and the aroma as it cooks!)

How to make it:
Place all your ingredients into your crock pot. Mix with a whisk until it is well blended, make sure there is no clumps of pumpkin puree. (See below- it should look creamy.)


Now, set your crock pot on low for 2 hours. I stir once while it is cooking. It smells just as amazing as it tastes. ;) 

Once it has been two hours, it is done! I ladle it into a mug, top with a dash of cinnamon. You can add a little whip cream too if you like! This makes a large batch so you can easily put any that is leftover into a container in the fridge. It also tastes amazing iced!

It is a great morning pick me up, a sweet little afternoon treat, or a guest favorite for fall parties or holidays! ENJOY!
