Strawberry Banana Split Bliss Bites

Umm...are these not gorgeous!?! To me, there is just something about pretty food, that I feel like makes it taste better!! 

I made these because I was craving something sweet, which is pretty rare for me these days (thanks Shakeology for filling all the nutrition gaps!). 

But hey, a girl has to indulge once a in while!! And indulge doesn't necessarily have to mean something needs to be total sugar filled, carb loaded garbage...you can always get creative and make SUPER YUMMY sweet treats that are actually good for you too! And the best part, ZERO GUILT. That is the name of my sweet game these days. ;) 

Ok...enough already...I know you want to know the recipe! 

What you'll need:
-6 Tbsp of Strawberry Shakeology
 (or Strawberry protein powder- although I have not tried it that way,
 so I can't speak to how it will turn out! Another alternative would be to use strawberry yogurt and skip the coconut oil- great for kids that way too!)
-4 Tbsp coconut oil (room temperature, melted)
-5 banana slices-5 strawberry slices
-5 blueberries
-5 small pieces of pineapple (I used pineapple chunks in 100% from the can, cut in half)
-2 1/2 tsps melted dark chocolate chips 
-some chopped peanuts (optional)


How to make them:
First, I mix my Shakeology and coconut oil together in a bowl, with a fork, until it has a "wet sand" like consistency (I know, odd comparison but that is how I think about it! HAHA!).
Once it is mixed well, pour the mixture equally into 5 muffin tin openings, like in the picture down below. 

Top each with a slice of banana, a slice of strawberry, a blueberry and a piece of pineapple. I try to make sure each piece of fruit is at least part way into the mixture so that they don't fall out and can be seen easily (makes them look more attractive to the eye!). 

Pop tray into the freezer for about 25 minutes. 

About 5 minutes before you are ready to remove them from the freezer, prepare your chocolate. 
I put my dark chocolate chips into a glass measuring cup, and put then in the microwave. I heat them for 10 seconds a time, stirring, then heating again for 10 seconds, stirring again...so on and so forth until they are melted. 

When you remove them from the freezer, gently flip the pan over and tap the bottom (I do this over my counter, on top of a paper towel, so they don't fall far and break in half). If they seem to be stuck, you can gently stick a thin knife right in along the side of the muffin pan, and they should pop out. 
Place them on a plate. 

Now take your melted chocolate and I just drizzle it evenly over the all 5 Strawberry Banana Split pieces, with a spoon, until they all have an even amount. 
You can drizzle all in the same direction, or get fancy and drizzle in two directions. If you want to make it really taste like an old fashioned banana split, add some chopped peanuts before the chocolate dries. ;) 

And that is IT! Fancy little blissful bites are ready for your eager consumption! You will LOVE every bite. I promise. ;)
