Southwest Sweet Potato & Bison Burger Sliders

I must admit, I had never had Bison prior to making these! I have always heard people rave about it, and I love trying new foods! You never know what you will love or what you are missing out on, unless you try it, right?! And my son absolutely loved them too! #MomWin

Sometimes you just want a good MEATY burger, and these deliver! I am personally not a bun fan, so I got creative and used sweet potato instead! 

They were amazing...I could literally eat them until the cows...err, I mean, buffalos come home! HAHA! I hope you enjoy them as much as we did!

Here is how to make them! Super simple!

What you'll need:
-1 lb grass fed Bison meat
-2 Tbsp southwest seasoning (will put the recipe below)
-1 medium/large sweet potato, peeled and cut into 1/4 inch slices
-1 tsp coconut oil
-sea salt and black pepper
-fresh spinach
-fresh avocado, sliced, skin removed (two pieces per burger) or guacamole would work too!
-hot sauce and jalapeño to put on top (optional)

You can really add whatever toppings you like-- get creative! Cheese, roasted peppers and sautéed mushrooms are some of my other favorite burger toppings!

Southwest Seasoning: (from the 21 Day Fix meal plan)
1 Tbsp chili powder
2 tsp ground cumin
1 tsp coriander 
1/2 tsp onion powder 
1/2 tsp garlic powder
1/2 tsp dried oregano 
1/2 tsp smoked paprika 
1 tsp sea salt 
Put all in a bowl and stir well!

How to make them:
Preheat oven to 375. Line a baking pan with foil.
Peel and slice your sweet potato. Place slices in a bowl and toss with coconut oil and a little bit of sea salt and pepper. Place potato slices, spread out evenly on the foil lined pan. 
Bake for 25-30 minutes, until they start to get crispy and a little bit browned. Make sure to flip them once during cooking. 

While your sweet potatoes are cooking, you will make your burgers!
Since I like burgers to be MEAT and no fluff, that is all it is! Put your bison meat in a bowl and add the 2 Tbsp of southwest seasoning. Mix well (I do so with my hands). Form into equal size patties, I made 4. (It is a good idea to use the size of your sweet potato slices as a judge to how big they should be.)

Heat a saute pan to medium heat. Add burgers. I cooked about 5 minutes on each side, and had a cover on the pan. I personally like mine cooked, but you can cook them to your desired doneness!

You could also grill them! 

Now, your sweet potatoes should be done and its time to  put those bad boys together! 

Place 4 sweet potato slices on a plate. Add a handful of spinach to each. Top each with a burger. Add two slices of avocado to each burger. Top with another slice of sweet potato. 
Add your desired toppings. 
I added Sriracha hot sauce to mine and a jalapeño!

Dig in and enjoy!
