Clean Tropical Breakfast Casserole 

I LOVE tropical food flavors. There is something about getting a bite of food with coconut and pineapple that makes me feel like, just for a moment...there is beach air whipping through my hair, sunshine beating down on my skin, and tropical waters at my feet. Ok, ok...let me stop fantasizing and get back to sharing this yummy recipe! 

I've made MANY versions of this clean breakfast casserole, because it is super simple (and FAST) to make and pop in the oven while I get a morning workout in on the weekends! And then...I get to dive into a place of heaven! ;) 

This tropical version of my casserole hit the spot! And my 3 year old loved it too. #MomWin!

Plus, it's a great breakfast to make if you have company! They'll think you are fancy, but only you will know how simple it was to make! (Your secret is safe with me!)

This is what you'll need:
-4 cups bread, cubed (I use Ezekiel or whole wheat bread)
-6 eggs whites
-1/2 cup milk (I used unsweetened almond milk)
-1/4 cup honey (or maple syrup)
-1 tsp vanilla extract

Toppings:
-1/4 cup shredded unsweetened coconut
-1/4 cup fresh pineapple, diced into small cubes
-1/2 large banana, sliced 


How to make it:
Preheat oven to 350 degrees. Take an 8x8 baking dish and spray with non stick spray. Add cubed bread to the baking dish. Set aside. 
In a mixing bowl, add the egg whites, milk, vanilla extract, and honey. Whisk well until thoroughly mixed.
Pour the egg mixture over the cubed bread evenly. 
Top with the casserole with diced pineapple, banana slices and shredded coconut. Make sure to spread them around evenly, so you get some in every bite!
Pop the casserole in the oven for 35-40 minutes! Remove and let it rest for 5 minutes! Now you are ready to dig into your tropical slice of breakfast heaven! I like to cut it into squares. The only thing missing is a cute little pink paper umbrella! HA! You can drizzle a little more honey and dash of cinnamon on top before serving, if you desire.
