Homemade Summer "Salsa"
This simple little "salsa" adds the perfect fresh summer flare to just about ANYTHING! It is amazing on fish, chicken or steak. Great on its own with some whole wheat tortilla chips. And SO good on top of tacos! And, per usual....super simple, healthy and flavor packed. Just how I like it!
How to make it:
Mix all these ingredients in a large bowl:
-2 cups chopped bell pepper (I used red, yellow and orange)
-1 cup halved cherry tomatoes
-1 cup fresh pineapple, diced
-1/2 cup chopped red onion
-1 cup of black beans (I use canned, rinsed)
-1 cup of corn
-1/3 cup chopped fresh cilantro
-juice of 1 to 2 limes
- sea salt and pepper to taste
Mix well and let it sit in the fridge for at least one our before serving! Enjoy!
