Asian Broccoli Slaw Salad 

This salad is SO good. Just the perfect combination of crunchy, sweet, salty & a little tangy...to really get your taste buds poppin'! I am a huge fan of taking typical salad or slaw recipe and putting a FRESH, healthy spin on it! 

I was inspired to make this recipe while I was on a weekend trip to the beach and needed a simple side that would go nicely with grilled burgers! This would also pair well with grilled shrimp or chicken or even sautéed tofu if you're going meatless! ;)

This is a great dish to bring to a BBQ or sure to be a crowd pleaser for summer get togethers! Plus, it is SO simple and takes less than 10 minutes to throw together! Win all around! 

What you'll need:
-2 12 oz bags of pre-cut ready to use broccoli slaw
-2 apples, washed and cut into cubes (I prefer sweet apples like Gala, but Granny Smith's would give this more of a tangy bite if you prefer!) (alternative: 1 cup of canned crushed or chunk pineapple)
-1/2 cup of diced purple onion 
-1 11 to 16 oz jar of mandarin oranges in juice, drained 
-1 cup of sunflower seeds (raw or roasted and lightly salted)
-1/2 cup dried cranberries, optional (I use no/less sugar added kind)
-1/2 cup of Ken's Lite Asian Sesame dressing  (I prefer less when using bottled dressing, but add more if you like ;) )
-juice of half a fresh lime 

How to make it:
Place ALL ingredients in a large bowl. Toss gently until well mixed and coated with dressing. 

Chill for at least 20 minutes before serving for best flavor and toss again before serving. That was EASY right! Told ya! ;)
