Pumpkin Apple Protein Overnight Oats 

We are in full swing with back to school routine and that means, I need a quick breakfast! Breakfast is seriously the most important meal of the day! Why? Breakfast kick starts your metabolism and gives your body some good (I hope) fuel, to start running for the day, after you have been "fasting" all night, hence the name, like break-the-fast! ;) It also improves your energy and focus, and it can also help you maintain a healthier weight-- as you are less likely to eat MORE later in the day. 

Need a quick breakfast or something you can take on the go?! Overnight oats are amazing for this! You can whip them up in about 5 minutes at night, put in the fridge, and viola, you have a super yummy breakfast in the morning!
Since were headed into fall, I decided to create this recipe full of some of my favorite fall flavors- pumpkin, apple and cranberry!! It is protein and fiber packed, to keep you full, and the apples and walnuts give it a really nice crunch! 

Here it what you'll need:
-1/2 cup non fat plain greek yogurt (I prefer the organic)
-1/2 cup 100% pure pumpkin puree (I used canned for this recipe)
-1/3 cup of old fashioned rolled oats 
-1/4 to 1/2 tsp pumpkin pie spice 
-1 tsp of honey & 1 packet of stevia (pure maple syrup works too!)
-1/2 cup of apple, chopped 
-1 tsp of walnuts 
-1 tsp of dried cranberries (I like the unsweetened ones because they're tangy!)

Here is how to make it: 
Place your greek yogurt, pumpkin puree, oats, 1/4 cup of apple, pumpkin pie spice, and 1 tsp of honey in a bowl. (see below!) Then, mix well! Place other 1/4 of chopped apple, walnuts and cranberries on top. Cover and refrigerate for at least 8 hours or overnight. 
And VIOLA! It is that simple. And SO yummy! If you like it a bit sweeter, you can add another 1/2 tsp of honey on top before serving! 

(You can easily multiply the recipe and make a few servings at a time, if you want to prep breakfast for a group, or make breakfast for 3 days all at once!)
